The Science of Healthy Eating

For the week of December 22nd, 2013

With a new year just around the corner, it’s time for many of us to make our annual resolutions list. If a healthier, more nutritious diet is on your 2014 agenda, you’ll be glad to know that University of Minnesota nutrition expert Joanne Slavin says you don’t necessarily have to give up some of your favorite foods. On this week’s Access Minnesota, Professor Slavin joins us to discuss healthy eating and what our guts tell us about our diets.

  • Guest: Joanne Slavin, Professor in the Department of Food Science and Nutrition at the University of Minnesota
  • Issues: What bacteria in our intestine can tell us about our diet; Why processed foods are good and bad for us; How many different kinds of diets can be equally successful
